We couldn’t agree more, especially learning that she and her family were caught in the cross-fire of covid last year and found themselves unexpectedly stranded in Iceland. Fortunately, they were able to find safe harbor with a local family for several months and discovered this family's son was on the glycemic index. Enamored by his curiosity and hype around the taste of an Oreo cookie, she found some gluten-free ones upon her return to Seattle and shipped them to this little boy to thank him for helping her family keep their toddlers entertained during a very scary and uncertain time.
